Ingredients

Ingredients
  • Cooking spray
  • 1 pound ground turkey
  • 2 ounce feta cheese, drained and finely crumbled
  • 1/2 cup seasoned breadcrumbs
  • 2 tablespoons olive oil
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons finely chopped fresh mint
  • 1 tablespoon finely chopped fresh oregano, plus oregano leaves for garnish
  • 1 tablespoon finely chopped fresh flat-leaf parsley
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon lemon zest from 1 lemon, plus lemon wedges for serving
  • 1/4 teaspoon crushed red pepper
  • 1 large egg, lightly beaten

Method

  1. Gather all ingredients.
  2. Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a large rimmed baking sheet with aluminum foil; spray with cooking spray.
  3. Place ground turkey, feta, breadcrumbs, olive oil, red onion, mint, oregano, parsley, salt, black pepper, garlic powder, cumin, lemon zest, crushed red pepper, and egg in a large bowl; stir gently until well combined.
  4. Using a cookie scoop or tablespoon, shape mixture into 24 (1-ounce) meatballs; arrange in an even layer on the prepared baking sheet. Generously spray meatballs with cooking spray.
  5. Broil in the preheated oven until meatballs are golden brown on top, and an instant-read thermometer inserted into thickest portion of meatballs registers 165 degrees F (74 degrees C), 8 to 10 minutes. Rotate baking sheet from front to back halfway through cooking time. Garnish with oregano leaves, and serve with lemon wedges. Recipe developed by Amanda Stanfield
