Ingredients
  • 1 1/2 cups low-sodium vegetable broth
  • 3/4 cup tricolor or red quinoa, rinsed
  • 1/2 teaspoon salt
  • 5 ounces baby kale
  • 3/4 cup Green Goddess Dressing see footnote
  • 1 15-ounces can chickpeas, rinsed and drained
  • 1 cup grape or cherry tomatoes, halved
  • 1 large carrot, coarsely shredded 3/4 cup
  • 1/2 cup dried cherries or raisins

  2. Toss kale with half of the Green Goddess Dressing in a large bowl. Divide among 4 bowls. Top with quinoa, chickpeas, tomatoes, carrot, and dried cherries. Drizzle with remaining dressing. Sprinkle with hazelnuts.
