Ingredients

Ingredients
  • 6 to 8 ounces Skinless Salmon
  • 1 tablespoon Italian Seasoning
  • 7 ozs Mediterranean-flavored Feta cheese in a block
  • ½ Red Bell Pepper sliced
  • 1 Carrot cut in half and sliced thin
  • 1 cup Portabella Mushrooms sliced
  • 1 cup Cherry Tomatoes
  • 2 Cups Fresh Spinach
  • 1 tablespoon Olive Oil
  • 16 ounces Penne Pasta
  • Sun-dried tomatoes for garnish
  • Grated Parmesan cheese for garnish

Method

  1. Preheat the oven to 350 degrees F (180 degrees C). Season salmon with Italian seasoning.
  2. Add salmon, feta block, bell peppers, carrots, mushrooms, cherry tomatoes, and spinach to a sheet pan or other oven-safe pan. Drizzle with olive oil.
  3. Bake in the preheated oven until salmon flakes easily with a fork, 20 to 25 minutes.
  4. Meanwhile, bring a large pot of salted water to a boil and cook penne until tender with a bite, about 11 minutes. Drain and set aside.
  5. Remove salmon and vegetables from the oven. While everything is still hot, use a fork to blend  feta with salmon and vegetables, being careful to keep salmon in at least bite-sized chunks. Use caution smashing tomatoes; juice may splatter.
  6. Add pasta and combine well. Garnish with sun-dried tomatoes and Parmesan cheese.
