Ingredients

Ingredients
  • 1/2 cup mayonnaise
  • 1/4 cup high protein Greek yogurt
  • 2 tablespoon extra virgin olive oil
  • Juice of 1 large lemon about 3 tablespoon
  • 2 teaspoon lemon zest
  • 2 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 garlic clove, finely grated
  • 1/4 cup finely grated Parmesan
  • 1–2 anchovy fillets, mashed or 1 teaspoon anchovy paste
  • Salt and freshly ground black pepper to taste
  • 1 lb short pasta radiatori, shells, gemelli, fusilli, or farfalle
  • 1 1/2 cups frozen peas, thawed
  • 3/4 cup grated Parmesan, divided
  • 1/2 cup Sweetie Drop peppers, drained
  • 2 tablespoon finely minced fresh parsley, optional
  • Fresh cracked black pepper

Method

  1. For dressing, add mayonnaise, yogurt, olive oil, lemon juice, lemon zest, Dijon mustard, Worcestershire sauce, garlic, Parmesan, and anchovies to the jar of a high powered blender; whisk together until smooth, about 30 seconds. Season with salt and pepper. Refrigerate until needed.
  2. Meanwhile, for salad, bring a large pot of salted water to a boil and cook pasta until just al dente according to package directions, 8 to 12 minutes. Drain pasta well; cool to room temperature, about 10 minutes.
  3. Toss pasta with dressing in a large bowl. Fold in peas, 1/2 cup Parmesan cheese, parsley, and Sweety Drop peppers. Refrigerate for at least 1 hour before serving.
  4. To serve, sprinkle with remaining Parmesan and freshly cracked pepper.
