Ingredients

Ingredients
  • 1/2 cup Greek yogurt
  • 2 teaspoons frozen orange juce concentrate
  • 1 teaspoon honey, or to taste
  • 1/2 cup pineapple tidbits, drained, juice reserved
  • 1 cup blueberries
  • 1 cup sliced strawberries
  • 1 small mango, diced
  • 1 banana, sliced crossways
  • 1 kiwi, peeled and sliced crossways
  • Fresh mint sprigs

Method

  1. For dressing, combine Greek yogurt, orange juice concentrate, honey, and about 1 tablespoon reserved pineapple juice. Stir until well blended. Taste dressing and adjust; for sweeter dressing, add honey a teaspoon at a time. Add pineapple juice a tablespoon at a time for flavor or to loosen the dressing. Set aside.
  2. Combine pineapple, blueberries, strawberries, mango, banana, and kiwi in a bowl. Add in dressing, and toss.
  3. Place in a serving bowl or in individual bowls, garnish with mint leaves, if desired, and serve.
