Ingredients

Ingredients
  • 8 ounces dried cavatappi pasta
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 1-ounce package ranch dry salad dressing mix
  • 1/8 teaspoon ground black pepper
  • 1 pound thick-sliced bacon, crisp cooked and crumbled
  • 2 cups diced cooked chicken breast
  • 2 cups cherry tomatoes, halved
  • 1/2 cup finely chopped red onion
  • 1/2 cup chopped green onions, plus more for garnish
  • 1/2 cup slivered almonds, toasted
  • 6 ounces mild cheddar cheese, shredded 1 1/2 cups, divided

Method

  1. Bring a large pot of salted water to a boil over high heat. Add pasta and cook according to package directions until al dente. Drain and rinse briefly under cold water to cool; drain well.
  2. Whisk together mayonnaise, sour cream, ranch dressing mix, and black pepper in a large bowl until smooth.
  3. Add cooled pasta, bacon, chicken, tomatoes, red onion, green onions, almonds, and 1 cup of the cheese to the bowl. Toss gently until evenly coated in dressing.
  4. Cover and refrigerate for at least 1 hour or up to 3 days.
  5. Stir pasta salad before serving. If needed, stir in a small amount of mayonnaise or milk to loosen. Top with remaining cheddar cheese and garnish with additional green onions. Recipe developed by Nicole Irwin
