Ingredients

Ingredients
  • 8 ounces frozen fully cooked chicken tenders, such as Just Bare
  • 1 14-ounce bag coleslaw mix
  • 1/4 cup chopped cilantro
  • 2 Tablespoons minced fresh basil
  • 2 Tablespoons minced fresh mint
  • 2 Tablespoons sliced raw almonds
  • 2 green onions, sliced, divided use
  • 1/3 cup purchased Sesame Ginger salad dressing, or to taste
  • 1 Tablespoon sesame seeds

Method

  1. Prepare chicken tenders according to the package instructions. If using the air fryer, it will take about 13 minutes, or in the microwave on High, about 4 minutes. Allow to cool, cut into bite-sized pieces, and set aside.
  2. Meanwhile, for salad, combine coleslaw mix, cilantro, basil, mint, and sliced almonds in a large salad bowl.  Reserve about 3 tablespoons sliced green onions, and add the rest to the salad.
  3. Toss ingredients with salad dressing, and adjust quantity to taste.
  4. Top the salad with prepared, cut-up chicken, reserved green onions, and sesame seeds. Serve immediately.
