Ingredients

Ingredients
  • 1 tablespoon olive oil
  • 1 pound 93% lean ground turkey
  • 2 zucchini, quartered lengthwise and sliced 3/4-inch thick
  • 1 bell pepper any color, seeded and chopped
  • 1 small onion, diced
  • 2 cloves garlic, peeled and minced
  • 1 15.25 ounce can black beans, undrained
  • 1 14.5 ounce can diced fire roasted tomatoes, undrained
  • 1 14.5 ounce can diced new potatoes, drained and rinsed
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • salt and freshly ground black pepper to taste
  • chopped fresh parsley and a sprinkle of red pepper flakes, optional

Method

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey, and cook until meat is browned and crumbly, 4 to 5 minutes.
  2. Add zucchini, bell pepper, and onion, and stirring occasionally, cook until the veggies are tender, about 5 to 6 minutes. Stir in garlic and cook until fragrant, about 30 seconds.
  3. Stir in black beans, tomatoes, potatoes, basil, and thyme. Season with salt and pepper, reduce heat, and simmer for about 5 minutes. Add a little water if it becomes too thick.
  4. Garnish with parsley and red pepper flakes, and serve.
