Baked Swamp Beans

These baked swamp beans are a refreshing change from typical sweet baked beans, a little more savory with andouille sausage, seasoned turnip greens, and onion soup mix, and with a nice heat level from jalapeno and Cajun seasoning.

Ingredients

Ingredients
  • Cooking spray
  • 1 tablespoon olive oil
  • 1 pound andouille sausage, sliced crosswise
  • 1 yellow onion, chopped
  • 1 small green bell pepper, chopped
  • 1 large jalapeño chile, seeded and chopped
  • 1 cup ketchup
  • 3/4 cup packed light brown sugar
  • 1/2 cup spicy brown mustard
  • 1/4 cup Worcestershire sauce
  • 1 1 ounce envelope onion soup and dip mix
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon apple cider vinegar
  • 4 16 ounce cans navy beans, rinsed and drained
  • 1 14.5 ounce can seasoned southern-style turnip greens, drained

Method

  1. Preheat the oven to 350 degrees F (180 degrees C). Coat a 9x13-inch baking dish with cooking spray; set aside. Heat oil in a large skillet over medium-high heat, and add sausage; cook, stirring often, until brown in spots, about 6 minutes. Drain and discard fat, if desired.
  2. Stir in onions, bell pepper, and jalapeño; cook, stirring often, until softened, about 5 minutes. Remove from heat.
  3. Whisk together ketchup, brown sugar, mustard, Worcestershire, soup and dip mix, Cajun seasoning, and vinegar in a large bowl until smooth.
  4. Add beans, turnip greens, and sausage mixture; stir to combine. Transfer to prepared baking dish
  5. Bake in the preheated oven until bubbly, 50 minutes to 1 hour. Let stand at least 10 minutes before serving. Recipe developed by Julia Levy
